Even better, this homemade soup can be made ahead of time and freezes beautifully, making it a convenient option for busy days.

There’s something incredibly satisfying about a hearty bowl of soup that warms you from the inside out. When making soup, the goal is simple: create something nourishing, comforting, and full of flavor.

This Beef Barley Soup delivers exactly that. With tender chunks of beef, wholesome barley, and plenty of vegetables, every spoonful is rich, savory, and deeply satisfying. It’s a simple recipe that’s easy to prepare and is sure to become a favorite during the colder months.

Ingredients

  • 1 pound boneless chuck roast, trimmed and cut into ½-inch pieces

  • 1 ½ cups carrots, thinly sliced

  • 1 ½ cups celery, thinly sliced

  • 2/3 cup onion, chopped

  • 1 package pre-sliced mushrooms (8 ounces)

  • 2 tablespoons beef base

  • 8–10 cups water

  • 1 large bay leaf

  • Salt and pepper to taste

  • Pearl barley (added during cooking)

Instructions

1. Brown the Beef

Heat a non-stick skillet over medium heat. Add the beef pieces and cook until browned, stirring frequently so they brown evenly.

2. Transfer to the Slow Cooker

Remove the browned beef from the pan and place it in a slow cooker. Add the carrots, celery, chopped onion, and sliced mushrooms.

3. Add the Broth Base

Stir in the beef base, water, garlic, and bay leaf. Mix everything together so the ingredients are evenly distributed.

4. Start Cooking

Cook on high heat for 1 hour.

After the first hour, add the pearl barley, then reduce the heat to low. Continue cooking until the beef becomes tender and the vegetables are soft.

5. Season and Finish

Add salt and pepper to taste. Remove and discard the bay leaf before serving.

Cooking Tips for the Best Beef Barley Soup

Choose the Right Cut of Beef

This recipe works best with tougher cuts of meat such as chuck roast or beef shoulder. These cuts become tender and flavorful after slow cooking, making them perfect for soups and stews.

Browning the Beef Adds Flavor

While browning the beef is technically optional, it adds a deeper, richer flavor to the soup. The caramelized edges of the meat create extra savory depth in the broth.

However, if you’re short on time, you can skip this step and the soup will still turn out delicious.
