Ingredients

For the Creamed Peas

  • 2 tablespoons unsalted butter

  • 1 small shallot or onion, finely chopped

  • 2 cloves garlic, minced

  • 2 tablespoons all-purpose flour

  • 1 cup milk (whole or 2%)

  • 1 cup frozen peas

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

  • Pinch of nutmeg (optional)

  • 1 teaspoon lemon juice

For Serving

  • 2 slices bread (sourdough, whole wheat, or white)

  • Butter for toasting (optional)

  • Fresh herbs such as parsley, chives, or mint (optional)


Instructions

1. Prepare the Toast

Toast the bread slices until they reach your preferred level of crispness. If you like, spread a thin layer of butter over the warm toast for extra flavor. Set aside.

2. Cook the Shallots and Garlic

In a medium saucepan, melt the butter over medium heat. Add the chopped shallot or onion and sauté for about 2–3 minutes until softened.

Stir in the minced garlic and cook for about 30 seconds, just until fragrant.

3. Make the Cream Sauce

Sprinkle the flour over the sautéed onions and garlic. Stir continuously for about 1 minute to form a light roux.

Gradually pour in the milk while whisking constantly to prevent lumps from forming. Continue cooking for 2–3 minutes until the sauce begins to thicken.

4. Add the Peas

Stir in the frozen peas and cook for another 2–3 minutes until they are heated through.

Season the mixture with salt, black pepper, a pinch of nutmeg, and a splash of lemon juice. Taste and adjust the seasoning if needed.

5. Assemble the Dish

Spoon the warm, creamy peas generously over the toasted bread slices.
