Ingredients

  • 454 g rotini pasta (elbow macaroni or spaghetti can also be used)

  • ½ teaspoon kosher salt

  • 2 tablespoons butter

  • 2 tablespoons olive oil

  • 1 tablespoon minced garlic

  • 1 medium green bell pepper, diced

  • 1 medium onion (white or yellow), diced

  • 227 g mushrooms, sliced

  • ½ teaspoon kosher salt

  • ½ teaspoon black pepper

  • 2–3 cups shredded cheese (mozzarella, Italian blend, or cheddar)

  • ¼ cup sour cream

  • 1 jar (about 794 g) red pasta sauce

  • 1 pound ground sirloin or ground beef

  • 4 oz cream cheese, softened

  • 1 cup cottage cheese

Instructions

1. Cook the Pasta

Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

2. Prepare the Vegetables

Dice the green bell pepper and onion, and slice the mushrooms.

In a large skillet, heat the butter and olive oil over medium heat. Add the garlic, peppers, onions, and mushrooms. Sauté for about 3–4 minutes until the vegetables begin to soften.

3. Cook the Beef

Add the ground sirloin or beef to the skillet with the vegetables. Season with salt and black pepper.

Break the meat into small pieces while cooking and continue until the beef is fully browned. Drain any excess fat.

4. Add the Pasta Sauce

Stir in the jar of pasta sauce and allow the mixture to simmer gently while preparing the cheese layer.

5. Make the Creamy Cheese Mixture

In a medium mixing bowl, combine:

  • softened cream cheese

  • sour cream

  • cottage cheese

Use a hand mixer or whisk to blend until the mixture becomes smooth and creamy.

6. Assemble the Casserole

Preheat the oven to 350°F (175°C) and lightly grease a 9×12 inch baking dish.

Spread half of the cooked pasta in the bottom of the baking dish.

Add the cheese mixture on top and spread it evenly across the pasta.

Layer the remaining pasta over the cheese mixture, then pour the meat sauce evenly over the top.

7. Bake

Cover the dish with foil and bake for 20 minutes.

Remove the foil and sprinkle the shredded cheese over the top.

Return the dish to the oven and bake for another 10–15 minutes, or until the cheese is melted and bubbly.

8. Rest and Serve

Allow the baked spaghetti to rest for about 5 minutes before slicing and serving.
